Am I the only one that prefers to eat dessert for breakfast? I swear it tastes better. Peach crisp and ice cream? It’s like eating fruit, oatmeal, and milk, right? 😉 Brian and I have been on a homemade ice cream kick this summer. We have this ice cream maker and let me tell you, it is ahhh-mazing. It makes ice cream making incredibly easy and fast. So fast! Pair it with fresh peach crisp and you’ve got the perfect end of summer dessert.
Homemade Vanilla Ice Cream
via
1 cup whole milk
¾ cup granulated sugar
pinch salt
2 cups heavy cream
1 tablespoon pure vanilla extract
In a medium bowl, use a hand mixer on low speed or whisk to combine the milk, sugar and salt until the sugar is dissolved. Stir in the heavy cream and vanilla. Cover and refrigerate 1 to 2 hours, or overnight. Turn on the Cuisinart® ice cream maker; pour the mixture into the frozen freezer bowl and let mix until thickened, about 15 to 20 minutes. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.
Peach Crisp
Filling:
6-8 peaches
1/3 cup sugar
Pinch of salt
Pinch of cinnamon
Topping:
1 1/2 cups old fashioned oats
1/2 cup brown sugar
1/4 cup flour
6 tablespoons cold butter
Pinch or two of cinnamon
Preheat oven to 350. Peel, pit and slice peaches into wedges and place in medium sized bowl. Add sugar, salt and cinnamon. Place into an 8×8 greased pan. Cut butter into small slices. Stir butter with topping ingredients and crumble over peaches in pan. Bake for 30 minutes or until golden brown on top. Serve warm with ice cream.
Do you have a favorite summer/fall treat? As soon as the weather starts cooling down slightly, I always find myself in a major baking mood. I’d love to hear some of your favorites!
