A pre-back to school breakfast, that is! We’ve been having an awesome summer – lazy mornings + a very relaxed schedule, so this week we decided it was time to switch back into our normal routine. Back to waking up early and not staying in our pajamas all day, I guess. 😉 We kicked off our week with a little breakfast! This was probably the easiest breakfast I’ve ever thrown together – think five minutes tops! – but Ellie, oh Ellie, though it was the BEST. THING. EVER. In fact when she walked into the kitchen she said, “Coloring and waffles, mom? Oh mom, this is GENIUS!” Haha.
Our breakfast consisted of Eggo® waffles, fresh fruit, whipped cream, and a few sprinkles for garnish. Or, they were supposed to be a garnish. Ellie thought they should be one of the main food groups on her plate. 😉 Pink butcher paper was our tablecloth and with a jar of crayola markers, we spent the whole morning coloring and eating at the table together. Perfect for fueling mind and body!

Biscoff Spread (my fav!)
Syrup
Sprinkles (Obviously Ellie’s favorite)
Bananas
Chocolate Syrup (Brian’s fav!)
Fresh fruit
Chocolate chips
Choose favorite toppings and add to toasted waffle. Pair with paper tablecloth and Crayola markers for a fun back to school breakfast!
We stocked up Eggo® waffles, pancakes, and french toast the last time we were at Target. We usually get these for special occasions – but I also like the idea of having them on hand to pull out for fun surprises….and crazy school mornings. 😉 When you buy three participating Eggo® products with Crayola packaging and get $5 off of Crayola products at all stores. Perfect for back to school! (Ends Sept 30 – look for more info in a Target Circular Ad the first week of September) Ellie loves markers…sometimes a little too much, so we get the ultra-washable kind now. (We learned our lesson the hard way – apparently she loves to draw ‘Daniel Tiger stripes’ on her face. Ha!)
Having breakfast + coloring was a great jump start to our day, as we spent the rest of the afternoon making books about all of our summer adventures and coloring pictures of waffles, from this free downloadable activity booklet. I’ve said it before, and I’ll say it again, having kids is the best! I mean, you would have thought it was Christmas morning and all I did was cover the table in butcher paper and make a super easy meal! 😉 Adding this one to my list of tricks – it’s a keeper!
