Every day, right around four-thirty, everything seems to fall apart at our house. Snacks get spilled, toys are strewn everywhere (even if we just cleaned them up!), tantrums are thrown, and dinner seems to be the last thing on my mind. Brian usually gets home around five, and as much as I’d like to be the wife that has dinner on the table when he gets home, it rarely happens. Then my mom gave me her white chicken chili recipe. Life changed! This dinner is incredibly simple and takes less than fifteen minutes to make. Plus, it tastes like you spent all afternoon in the kitchen. Shh, don’t tell anyone otherwise. 😉
Amy’s White Chicken Chili
In a large pot add:
3 cans drained Great Northern White beans
2 cans Swanson’s Chicken Broth
2 cans diced chiles
1 can Costco canned chicken with juices or Rotisserie chicken
1 TBSP dried onion
1/2 tsp Garlic Powder
1/2 tsp Garlic Salt

Heat on stove and then add 2 cups frozen super sweet white corn. Corn should only take a few minutes to cook and warm.
When it’s done, scoop into bowls and top with shredded cheese and diced avocado. Serve with tortilla chips.
