The air is getting crisp and some of the trees high up in the mountains are turning bright, bold shades of reds and yellows. With autumn just around the corner, Brian and I are clinging to summer for just a tiny bit longer. Lately we’ve been eating our dinner on the front porch, while Ellie takes a few bites of hers, then runs around and plays. It’s the perfect way to enjoy the last of the summer evenings while simultaneously wearing Ellie out for bed. 😉 One of our favorite, and super easy, summer meals has been my mom’s famous spinach salad with poppy seed dressing. I can’t tell you how many times we’ve eaten it in the last few weeks. Delicious! My mom so graciously let me spill her recipe on the blog today. Trust me, you’ll want to try this one!
Amy’s Spinach Salad & Dressing
Salad Ingredients: Spinach, Leafy Lettuce, Red Onion, Sliced Mushroom, Shredded Motzerella Cheese, Sliced Strawberries or Maderin Organges, Candied Slivered Almonds, and Bacon or Chicken.
Dressing:
3/4 TBSP Poppy Seeds
1/3 c. white vinegar
1/3 c. sugar
3/4 TBSP onion flakes
3/4 c. oil
3/4 tsp salt
1/8 c. yellow mustard
Shake well before using.

Also, candied slivered almonds are super, duper easy to make! Just put in a frying pan 2 TBSP sugar with about 1/2 cup slivered almonds. Heat and stir on medium / med-high heat until sugar is sticky and coating all of the almonds. When they are cool, they will be crunchy and delicious! Store in ziploc bag. Mmmmm! So good!
