We made these mini peanut butter brownie bites on Sunday and we are in heaven.
Not to mention, they’re super easy! I think all we make is easy recipes around here 😉 Recipe below.
Ingredients:
1 box of your favorite brownie mix + ingredients
1 cup peanut butter
1-2 cups powdered sugar
Milk
Chocolate chips
Preheat oven to 350 degrees. Spray mini muffin tins well. And I mean, really well. Make brownie batter. We love using Ghirardelli Triple Chocolate Brownie Mix from Costco. It’s our favorite! Spoon into muffin tin, about 3/4 the way full, and bake for 13 minutes. Let cool then remove from pan. Press down centers to make into a cup. I did have to remove a few centers, but for the most part, I just pushed them down towards the bottom and sides. Mix together 1 cup peanut butter and 1-2 cups powdered sugar. 1 cup will make it only a little bit sweeter (what we prefer!) and 2 cups will make it extra sweet. The mix will look a little crumbly. Add a tablespoon or so of milk, or until desired consistency. (It will feel like a frosting but not quite as sweet!) Scoop filling into piping bag or Ziploc bag and cut the corner off. Pipe into brownie cups and adorn with chocolate chips. Mmmmm!
