Last week, Ellie and I were invited on a little adventure with one of our neighbors. We hung out at a “beach” and we had a BLAST! (In Utah our “beaches” consist of a small pond with some imported sand 😉 The kids played in the sand, chased the ducks, and splashed in the water. After playing for awhile, my friend pulled out some watermelon juice, and Ellie and I have been hooked ever since. It was refreshing, cool and perfect for a summer afternoon.
Since our adventure, I’ve been making some to keep in our fridge. It’s just that good! I’m all for easy recipes, and this one is about as easy as it can get. You’ll only need three ingredients and bonus, it’s much healthier and fresher than super sugary juice.
Ingredients needed:
-watermelon, cubed
-cold water
-sweetener of choice (optional)
Using your blender, blend watermelon cubes until smooth. Add water to achieve desired consistency. I wanted my juice a little thinner, so I added a cup or two of water, and a tiny bit of sugar to taste. Chill in fridge until serving. The best part about this recipe is that you can make as little or as much as you want. Definitely serving this at our next party!

My favorite thing to do is freeze the watermelon cubes and blend them with lemonade concentrate, water, and mint leaves. Try it sometime. 🙂
