It’s my birthday today! Wahoooo! Of course, the doctor just diagnosed me with walking pneumonia, so you know, that’s awesome. 😉 Regardless of being sickly, I plan on stuffing myself with every sweet in sight. Because, you know, it’s my birthday and I can!
In honor of my birthday week, Ellie and I made some Sweet Tooth Fairy chocolate cupcakes (mmmm!) and a video! I let her eat some of the chocolate pudding we used in the batter and boy oh boy, she went to town! She loved it to say the least! (All you super clean moms out there are going to have a heart attack, Ellie was a complete mess by the end, along with the entire kitchen! 🙂 Hooray for birthdays!!!
And of course, before I forget, a recipe!
Sweet Tooth Fairy Chocolate Cupcakes via
1 1/2 cups flour
1 cu sugar
1 cup + 2 tablespoons dark chocolate cocoa
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup sour cream
3/4 cup ready-to-eat chocolate pudding
1/2 cup butter, melted
1 cup semisweet chocolate chips
Preheat oven to 350. Line 24 cupcake pans with liners. In large bowl, mix together all the dry ingredients with electric mixer for 30 seconds or well combined. Add wet ingredients. Mix on medium speed for 1 minute. Scrape bowl and resume mixing for another minute. Fold in chocolate chips.
Fill liners 3/4 full. Bake for 15-18 minutes, or until toothpick inserted comes out clean. Cool completely then frost with favorite frosting!
