Our Cinco de Mayo celebration consisted of …. PASTA! We kind of forgot it was Cinco de Mayo..oops! Good thing we had Café Rio on Tres de Mayo. 😉 Sunday the weather was gorgeous so we ate our dinner outside. Brian made us eggplant parmesan, and pasta, and rolls, and I…..made a salad. I love having him home on the weekends, and having him cook! Ellie loved eating outside and I loved having all the windows and doors open. Well, minus the whole bee fiasco. (“Brian, there’s a beeee in the house! A beeeeee! Get it out, get it out! Ewwwwwww!”) Ha! We finished up our dinner right in time, it soon started to rain! We’re definitely fans of this spring weather. It was an A+ Cinco de Mayo!

Sounds like a lot of fun! We ate 7 Layer Bean Dip on Friday, that was a close as we got to celebrating!
